I love the smell of procrastination in the morning

I have bills to pay, work to do, and a son who doesn’t listen to me when I say, “You want me to change your diapers? File that under ‘D’ for ‘DO IT YOUR DAMN SELF’.”

So what do I do? Make banana applesauce walnut bread!

    I don’t get why he freaks out over diaper changes or why he smiles while he’s unloading one. I’ve never seen anyone enjoy themselves so much.

    Anyway, the recipe:

    2 cups all-purpose flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup butter
    3/4 cup brown sugar
    2 eggs, beaten
    2 1/3 cups mashed overripe bananas

    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.

    2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

    3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

    I added in the applesauce because I didn’t know what else to do with it and I also used a square pan because I am not cool enough to own a loaf pan. *sigh*

  7. Thanks Drea for the banana bread recipe. I just used applesauce because I had to get it out of my kitchen before it grew into something fungal.

    Geez Jen, don’t you remember? I already drove a minivan in high school. I was really ahead of myself.
